QUINOA CHICKEN SALAD

INGREDIENTS
• 170g cooked skinless chicken breasts
• 100g cooked quinoa 100g garbanzo beans (chickpeas)
 11⁄2 cup fresh kale
 1⁄4 chopped red onion
 1 fresh lemon, juiced and zested
• 2 tbs white wine vinegar
• 1 tsp ground cumin
• Salt & pepper to taste
 
DRESSING
Whisk the lemon juice, zest, white wine
vinegar, and ground cumin together in
small bowl. Salt and pepper to taste.
 
DIRECTIONS
Toss all ingredients together and top
with dressing.
